I made these gluten-free cheese crackers all the time. I simply subbed gluten-free all-purpose flour in place of the regular, and the crackers came out crispy crunchy, as the original recipe (shared here) does. If you are not gluten-intolerant, you can use traditional all-purpose flour in this recipe.

I have very few dip recipes in my recipe binder and have been wanting to add more. Many of them are naturally gluten-free, or take just a few tweaks to make them gluten-free dips. My usual go to is this cheesy bean dip.
I served mine with an assortment of gluten-free crackers. You could also serve with toasted gluten-free baguette slices or tortilla chips. These grain-free twisty flax sticks would be so good with it!

So, are these homemade cheese crackers crunchy? They can be, yes! I found that if I slightly extended the bake time to about 19-20 minutes, the crackers had a crunch comparable to the store-bought version. If you prefer a slightly softer cracker, stick with about 16 minutes. I personally loved the softer texture!
I just made these and they are good. I made a few mistakes along the way, but that is par the course for me when making something new. The crackers are crispy, but after carefully measuring the cheese, both my husband and I desire more cheese. So when I make them again, I will measure by weight and not by the cup. I believe I am also going to cut them into long sticks .
To freeze: To freeze the cheeseball, wrap it well in plastic wrap (without nuts) and place it in a freezer safe ziplock bag. Freeze for up to 1 month. Thaw in the refrigerator overnight and add nuts once completely thawed.
